Mexi-fiesta Dip

Ingredients:
1 cup Mayo
1/2 cup grated Parmesan cheese
1/4-1/2 cup jalapeños (fresh)
2 cups pepperjack cheese (shredded)
2 10oz cans of Mexi-corn (drained)
Directions:
Mix all ingredients and place in a baking dish. Bake uncovered at 350 for 30-40 minutes or until cheese is melted. Serve with tortilla chips or Frittos.
Jalapeño Poppers

Ingredients:
One bag of jalapeños
1 to 2 packs of cream cheese plain or chive and onion (depending on how many jalapeños you have)
1 pack of bacon
Tooth picks
Directions:
Cut jalapeños in half. Rinse out the seeds in the middle (Spoon works great to scrap out). Cut bacon slices in half. Take a spoon full of cream cheese and place in a halved jalapeño. Wrap a half slice of bacon around jalapeño. Stick a toothpick in.
Grill- place on grill and cook until bacon is crispy
Oven- cook on 400 for 30 minutes or until bacon is crispy.

Ted Lasso Biscuits (Cookies)

I've been making these for about 6 months now. Wonderful shortbread cookies based off of the same treat that Ted Lasso gives to his boss in the show on AppleTV+.
Ingredients:
1.5 cups of flour
.5 cups of sugar
.5 cups of almond flour
.5 teaspoon sea salt
1 tsp vanilla extract (or paste)
2 sticks of softened unsalted butter (cut into smaller pieces)
Directions:
Combine dry ingredients
Add vanilla extract and butter
Continue mixing until a dough is formed
Pack into an 8x8 buttered baking dish
Use offset spatula to help even out the dough
Bake in oven for 30-35 minutes at 350°.
Let cool completely. Cut into squares. Enjoy!

Jalapeño Dip

Ingredients:
16 oz cream cheese
1 cup mayo 2 cups sharp cheddar cheese (1 cup for topping) 1 cup mozzarella cheese 7 chopped (deseed) fresh Jalapenos ( more if small ones) 1 roll of sausage (hot, mild, sage..your choice) 1 pack bacon (cooked and crumbled) 1 tbsp garlic powder Directions: Blend all ingredients together and spread into a casserole dish Top with 1 cup of Shredded Cheese Bake on 350 for 30 to 45 minutes
